Cherry Clafouti

Clafouti is a simple French dessert made with fruit covered with a not-to-sweet, custard-like batter. Make it for dessert, or to round out a brunch menu.

Ingredients

  • ¼ cup unsalted butter, plus more for greasing the dish

  • 1 pound sweet cherries, pitted

  • 3 eggs

  • cup granulated sugar

  • ¾ cup all-purpose flour

  • 2 teaspoons vanilla

  • pinch kosher salt

  • 1 ¼ cups whole milk

  • powdered sugar

Directions

  1. Preheat oven to 350°. Generously grease a 2-quart baking dish with softened butter. Melt 1/4 cup butter; let cool. Spread cherries in the bottom of prepared dish.

  2. In a medium bowl, whisk together eggs and granulated sugar until light and fluffy. Slowly whisk in the melted butter. Add flour, vanilla and salt; whisk until smooth. While whisking constantly, slowly pour in milk. Continue whisking until batter is smooth. Pour batter over cherries in baking dish.

  3. Bake until puffed and golden and a knife inserted in the center comes out clean, 35 to 40 minutes. Cool on a wire rack 20 minutes. Dust with powdered sugar and serve immediately.
